going to put one in, in the morning. It has a black rubber gasket on it, should I use it or take the orange one off of the original and put it on the Jet?

Use the one that comes with the Jet thermostat, either way there the same gasket really.

I used the one that cam with the Jet thermostat. No problems.

Unfortuneately that's a question that you'll get a different answer from each person that replies to it. My advice to you for fan settings is this. Try different settings and see which you like the most. The lower the fan settings the more the fans will run and if you set them near 180 degrees then they'll pretty much run all the time. I would suggest that whatever settings you use make sure it at least keeps the temps under 195 degrees or you're going to get heatsoke - preferably not higher than 190 degrees.
